A little peach cobbler...

 One of my favorite parts of Summer is the fresh fruit...and Don and I eat alot of it...we eat fruit with just about every meal this time of year...peaches are one we really eat a lot of...because we have a small peach tree...this year the peaches were smaller than last year...that may have something to do with the warmer winter and lack of rain...but they are very good nonetheless...so what to do with all those peaches...
 Make peach cobbler of course!! And I have the perfect easy recipe to share with you...
 We bake ours in our little convection oven this time of year...its hot enough without turning on the big oven...
 This cobbler's top is more of a cake...and oh so yummy...
Especially when you add ice cream to the warm cobbler...

So here's the easy...and I do mean easy...recipe...in case you have some extra peaches around...it works really well with blueberries or any other soft fruit too...

1/2 cup melted butter
1 cup + 3 tablespoons sugar
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk...I used non fat...I always do
1 teaspoon vanilla
peaches...I used 4 cups peeled and sliced
1/2 teaspoon cinnamon...I just sprinkle...it's probably closer to 1 teaspoon

Preheat oven to 375
While the oven is heating I take the 8 x8 pan I will cook the cobbler in and melt the butter in that...you can do it in the microwave...but why dirty a dish...I a mixing bowl combine 1 cup of the sugar...set the extra aside...the flour, baking powder and salt...stir to blend. Stir in the milk and vanilla until blended. Pour the batter over the butter...Do NOT stir!! Toss the peaches with the remaining sugar and cinnamon...and place the peaches in the pan on the batter...remember...no stirring this! Bake for about 30 minutes or until the top is golden brown...you will see the cake sort of form over the peaches...unless like me you put too many peaches in...but no matter it comes out that much better!The top will look brown and the cake will pull slightly from the pan...serve warm with ice cream...some people just put a little cream on it...but me...bring on the ice cream!!

The prep time on this is not much...your family will think you are wonderful...so try it...and enjoy!!

It looks sooo good!!! i only wish that I liked peaches. the smell of Peaches and cantaloupe gross me out. : )
