It's artichoke time...

One vegetable everyone in my family loves...is a good artichoke...but they are so expensive. We always considered them a delicacy...and waited for them to come into season and go on sale...

Now we just have to wait for the season to arrive...which is now...

Because about 3 1/2 years ago...I bought a pony pack of artichokes for about $2...and we have had artichokes ever since!!

They take quite a while to grow...but once you see those plants get about 3 feet tall...you peek down into the leaves...

And you see this!! Aren't they beautiful!! Last year we had a great bounty...and as long as this heat wave we're in doesn't last to long...we'll be OK. They really don't like too much heat. Towards the end of their production...we let a couple go to flower...they are beautiful purple flowers...but I like to eat them the best!! Then we just cut down the plant...and in the Fall...another plant will start growing...I like how that works!! We have definitely gotten our $2 worth!!!

Enjoy the day, my friends!!

I swear, you could put a dead stick in the ground in California and it would grow. My mouth is watering just looking at the picture. Hubby & I can make a meal out of just artichokes with garlic butter and mayo.
